The main reason why a gelatin mixture doesn’t set is usually because not enough gelatin was added. Other factors could include using the wrong type of gelatin or using gelatin that is damaged, oxidized, or expired.

Typically, when gelatin is added in the correct amount according to the recipe, the mixture should set properly. However, in many cases, users might not fully understand the process or make mistakes in the recipe, leading to an insufficient amount of gelatin being used to achieve the desired texture.
