Vietnamese Ham (Giò Chả) – A Timeless Tradition for Tet Feasts

Giò chả is an indispensable traditional dish on every Vietnamese table, especially during Tet celebrations.

In today’s modern Tet, many recipes transform traditional giò chả into unique creations with vibrant colors and diverse flavors. Let’s make Five-Colored Ham with Greenifi Gelatin, symbolizing the five elements of the Vietnamese ngũ hành (Five Elements), for a prosperous New Year!


Ingredients

  • 500g raw pork paste (giò sống)
  • 20g Greenifi Gelatin
  • 100ml water
  • 3 Chinese sausages (lạp xưởng)
  • 4 salted duck yolks
  • 3 fresh chicken eggs
  • 50g wood ear mushrooms (nấm mèo)
  • 50g shiitake mushrooms (nấm hương)
  • 100g pork skin (bì lợn)
  • 4 green beans (đậu cove)
  • 1 carrot
  • 3 tablespoons white wine
  • Seasonings: Pepper, sugar, fish sauce, salt, annatto oil, etc.
  • Tools: Food storage bags, aluminum foil

Instructions

1. Prepare Ingredients

  • Boil the Chinese sausages and pork skin.
  • Finely chop the shiitake mushrooms, wood ear mushrooms, and carrot.
  • Cook the salted egg yolks.
  • Soak Greenifi Gelatin in water.

2. Make Egg Wrappers

  • Whisk the 3 chicken eggs and make 3 thin omelet layers.

3. Mix the Pork Paste

  • Season the pork paste with fish sauce, pepper, and other spices. Mix in the soaked Greenifi Gelatin, wood ear mushrooms, carrots, and cooked pork skin. Divide the mixture into three equal portions.

4. Assemble the Ham

  • Spread a sheet of aluminum foil on a flat surface and place one egg layer on top.
  • Spread one portion of the pork mixture evenly on the egg, then layer salted egg yolks, green beans, and shiitake mushrooms on top.

5. Roll and Wrap

  • Roll the mixture tightly using the foil. Brush the outer surface with annatto oil for a vibrant color. Wrap tightly with the aluminum foil.

6. Steam

  • Steam the rolls for 20 minutes. Once cooked, let them cool, unwrap, and enjoy.
