Ingredients

  • 20g Greenifi Gelatin
  • 300ml filtered water
  • 1L unsweetened fresh milk
  • 220g condensed milk
  • 200g yogurt (2 small cups as starter culture)
  • 150g fresh pandan sticky rice
  • 200g granulated sugar
  • 50g tapioca starch
  • A handful of pandan leaves

Instructions

1️⃣ Prepare the yogurt base

  • Let the yogurt starter sit at room temperature.
  • Warm up the fresh milk, then stir in the condensed milk and room-temperature yogurt.
  • Ferment the mixture at 40°C as usual.

2️⃣ Make the pandan sticky rice layer

  • Blend pandan leaves with 200ml water, strain out the pulp, and mix the juice with sugar and tapioca starch.
  • Heat the mixture until boiling, then add sticky rice and cook on low heat for 5 minutes while stirring.
  • Divide the cooked sticky rice into small jars and let it cool slightly.

3️⃣ Prepare the gelatin yogurt

  • Soak Greenifi Gelatin in water for 5 minutes, then melt it over low heat.
  • Stir the gelatin mixture into the prepared yogurt.

4️⃣ Assemble the dessert

  • Pour the yogurt over the pandan sticky rice in the jars.
  • Refrigerate for at least 2 hours before serving.
