Ingredients:
4g Greenifi Gelatin
22g unsweetened milk
80g sugar
30g cocoa powder
100g dark chocolate
15g glucose sugar
15g milk powder
1/2 teaspoon vanilla extract
1/4 teaspoon salt
40g egg yolks (around 2 yolks)
135g whipping cream

Instructions:
Soak Greenifi Gelatin in water (1:5 ratio) for 5 minutes.
Heat a bowl with milk, sugar, cocoa powder, dark chocolate, glucose sugar, milk powder, vanilla extract, salt, and egg yolks until the mixture reaches 85°C.
Remove from heat and stir in the soaked Greenifi Gelatin. Cover with plastic wrap and chill in the fridge for 2 hours.
Whip the cream and fold it into the gelato mixture. Pour into a mold and freeze for 1 hour.
Beat the frozen mixture with a mixer for 30 minutes, then freeze for at least 3 hours.
